8 minutesHigh heatCut the chicken into 3 cm pieces, season with salt and pepper and brown in a little oil in a wide pan over medium-high heat for 6 minutes. Set aside.

8 minutesMedium heatCook the diced onion, carrot and celery in the same pan over medium heat for 8 minutes.

8 minutesMedium heatAdd the butter and flour and stir for 2 minutes. Whisk in the warm stock and milk little by little and simmer for 5 minutes.

25 minutesGentle simmerReturn the chicken, add the peas and simmer for 5 minutes. Season, then let it cool for 20 minutes.

10 minutesHeat the oven to 210°C. Spoon the filling into a 23 cm baking dish, cover with the cold puff pastry, press the rim, cut 3 steam vents and brush with the beaten egg.
