Dough
40 minutesKnead the flour, egg, half of the salt and the water for 10 minutes into a firm, smooth dough. Cover and rest for 30 minutes.

Filling
10 minutesGrate the onion very finely and squeeze out its juice. Mix it with the beef, the black pepper and the rest of the salt, and keep it in the fridge.

Shaping
45 minutesRoll the dough very thin, about 1 mm, and cut it into 3 cm squares. Put a pea-size piece of filling on each and pinch the four corners together tightly.

Boiling
12 minutesGentle simmerCook the manti in plenty of salted, gently boiling water for 8 to 10 minutes, then drain well.

4 minutesMedium heatStir the crushed garlic into the yogurt at room temperature. Melt the butter over medium heat, add the paprika and Aleppo pepper and take it off the heat after 30 seconds.

Watch outPaprika burns in seconds; take the pan off the heat quickly.

Serve
2 minutesSpoon the yogurt over the hot manti, drizzle with the paprika butter and sprinkle with the dried mint.
