    Making the dough

    Mix the flour, salt and water and knead for 8 minutes. Divide into 8 balls, cover and rest for 30 minutes.

    Topping

    5 minutes

    Squeeze the excess juice from the tomatoes. Pulse the lamb, bell pepper, onion, half of the parsley, 1 garlic clove, the tomatoes, the paprika and 1 teaspoon of salt in a food processor into a fine paste.

    Oven

    While the dough rests, heat the oven with a baking steel or heavy tray inside at 250°C for 30 minutes.

    Shaping

    10 minutes

    Roll each ball into a very thin oval, about 2 mm thick, on floured baking paper. Spread a thin layer of topping right to the edges and press it in.

    Slide two at a time onto the hot tray and bake for 5 to 6 minutes.

    Serve hot with the rest of the parsley and lemon wedges. Roll up to eat.
