    Blanching

    Bring a large pot of water to a boil, blanch the spinach for 2 minutes, then move it to iced water. Drain and squeeze lightly.

    Puree

    2 minutes

    Blend the spinach with 100 ml of the water until smooth.

    Paneer

    3 minutesMedium heat

    Fry the paneer cubes in 10 g of the ghee over medium heat for 2 to 3 minutes and set aside.

    Masala

    Heat the rest of the ghee over medium heat, add 1 teaspoon of cumin seeds for 30 seconds, then the chopped onion for 6 minutes. Add the garlic and ginger for 1 minute, then the chopped tomatoes, garam masala, 1 teaspoon of ground coriander and salt for 5 minutes.

    Simmering

    5 minutesLow heat

    Add the spinach puree, the rest of the water, the paneer and the cream and simmer gently for 5 minutes.
