2 hoursMix the yogurt, grated ginger and garlic, chili powder, half of the garam masala, half of the chopped mint, the lemon juice and 1 teaspoon of salt. Coat the chicken and refrigerate for 2 hours.

18 minutesMedium heatSlice the onion thinly and fry it in the oil over medium heat for 15 to 20 minutes, stirring, until deep golden. Drain on paper towels.

15 minutesWarm the milk, add the saffron and leave it for 15 minutes.

37 minutesHigh heatRinse the rice and soak it for 30 minutes. Boil the water with the cardamom, cloves, bay leaves, cinnamon and 1 tablespoon of salt, add the drained rice and cook for 5 to 6 minutes until about 70% done, then drain.

5 minutesGrease a heavy pot with some of the ghee. Spread the chicken and its marinade on the bottom, add half of the fried onions, then the rice. Top with the rest of the onions and mint, the coriander, the saffron milk, the rest of the garam masala and the melted ghee.

55 minutesLow heatSeal the pot with foil and the lid. Cook on medium heat for 10 minutes, then on the lowest heat for 35 minutes. Rest for 10 minutes before opening.
