    Spoon the thick top layer of the coconut milk into a heavy pot and cook it over medium heat for 5 minutes, stirring.

    Add the massaman paste and fry for 4 minutes.

    Beef

    Add the beef cubes and stir to coat, then pour in the rest of the coconut milk and enough of the stock to barely cover.

    Add the cinnamon, cardamom and bay leaves and simmer very gently for 70 minutes.

    Add the potatoes, cut in chunks, and the onion, cut in wedges, and cook for 25 minutes without stirring hard.

    Balance

    Soak the tamarind in 3 tablespoons of hot water, squeeze and strain. Add the tamarind water, palm sugar and fish sauce a little at a time, tasting, then stir in the peanuts and rest for 10 minutes.
