Preparation
15 minutesRinse the rice, soak it for 15 minutes and drain. Rub it with 30 g of the butter or ghee, the salt and the pepper.

Oven
10 minutesHeat the oven to 180°C and grease a clay or ovenproof dish with the rest of the butter. Spread the rice in the dish.

Milk
5 minutesHigh heatBring the milk and broth to a boil and pour over the rice, then spread the qeshta over the whole surface.
Success cueThe liquid covers the rice by about 2 cm.

Baking
55 minutesOven heatBake on the middle rack for 50 to 60 minutes.
Success cueThe liquid is absorbed, the rice is tender and the top is golden brown.

Browning
4 minutesOven heatIf the top is still pale, place under the oven grill on high for 3 to 5 minutes.
Success cueThe top is golden brown with a few darker spots.

Serve
10 minutesRest for 10 minutes before serving.

Cooking tips
Rubbing raw grains with ghee before adding milk coats each starch granule for separate grains.
