Soaking
30 minutesRinse the cracked wheat several times until the water runs almost clear, soak it for 30 minutes and drain.

Onions
20 minutesLow heatCook the sliced onion slowly in the ghee over medium-low heat for 20 minutes. Keep half for the top.

Simmering
55 minutesLow heatAdd the wheat, stock, cumin and pierced dried lime and bring to a boil. Cover and simmer on low heat for 55 minutes, stirring from the bottom every 10 minutes.

Watch outIt sticks easily as it thickens; stir from the bottom.

Yogurt
3 minutesLow heatWhisk the yogurt with the milk, add a ladle of the hot liquid to warm it, then stir it into the pot over low heat.

Watch outDo not let it boil after adding the yogurt, or it will curdle.

9 minutesLow heatBeat with a sturdy spoon over low heat for 8 to 10 minutes.

Chili ghee
1 minuteLow heatMelt the ghee for the chili ghee in a small pan over low heat for 1 minute, then take it off the heat and stir in the chili powder.

2 minutesAdjust the salt, remove the dried lime and top with the reserved onion and the chili ghee.
