Mix the cumin, ground coriander, cinnamon, turmeric, chili powder, black pepper, cardamom, ground ginger, cloves, ground dried lime and salt in a bowl.

    An even, rust-brown spice mix.

  2. 02

A thick, dark paste that clings to the spoon.

Cooking tips

Extra tip

Tamarind and vinegar in the paste soften the meat overnight and give shuwa its tangy, dark crust.

  • • Ask the butcher to leave the shoulder whole; the bone keeps the meat moist during the long roast.
  • • Seal the foil well so the meat steams in its own juices.

Common mistakes

  • • Marinating for only a few hours, so the spices stay on the surface.
  • • Roasting hot and fast, which dries the shoulder before it turns tender.
  • • Leaving gaps in the foil, so the juices dry up.

Substitutions

  • • Instead of lamb shoulder: a bone-in leg of lamb of the same weight
  • • Instead of tamarind: 2 tablespoons of pomegranate molasses
  • • Instead of ground dried lime: the grated zest of 1 lemon

Serving ideasServe on a large tray over white rice with the pan juices, lemon wedges and a green salad.

Frequently Asked Questions

How is shuwa cooked in Oman?

The marinated meat is wrapped in banana or palm leaves, sealed in a sack and lowered into a sand pit lined with hot embers, then left for 24 to 48 hours. It is a dish of the Eid days.

Can I use banana leaves at home?

Yes. Wrap the meat in softened banana leaves first and then in foil; they add a light, grassy aroma.

What do Omanis serve with shuwa?

Plain or lightly spiced white rice to soak up the juices, with a hot sauce or a simple salad on the side.
