  1. 01

    Marinating

    30 minutes

Cut 3 deep slashes on each side of the kingfish. Mix the crushed garlic, 60 ml of the lemon juice, the cumin, ground coriander, cinnamon, ground ginger, turmeric, chili powder, 30 ml of the oil and 8 g of the salt, rub it into the cuts and inside the fish, and leave for 30 minutes.

    Success cue

Yellow-red paste deep in every slash.

  2. 02

    Soaking

    20 minutes

Meanwhile, rinse the rice and soak it for 20 minutes.

    Success cue

    White, opaque grains.

  3. 03

    Grilling

    24 minutesHigh heat

Heat the oven grill to high or light a charcoal grill. Grill the fish on an oiled rack for 10 to 12 minutes per side, brushing with 15 ml of the oil, until the skin chars in spots and the flesh flakes at the bone.

    Success cue

Charred skin and white flesh that flakes.

    Watch out

Fish is done at 63°C next to the bone.

  4. 04

    Rice

    23 minutesLow heat

While the fish grills, cook the chopped onion in the rest of the oil for 5 minutes, add the cashews for 3 minutes, then the cardamom and drained rice. Pour in the boiling water with the rest of the salt and the lemon zest, cover and cook on the lowest heat for 15 minutes.

    Success cue

    Fluffy rice with golden cashews.

  5. 05

    Serving

    2 minutes

Stir the rest of the lemon juice into the rice, spread it on a platter and lay the fish on top.

    Success cue

Whole charred fish on yellow-white rice.

Cooking tips

Extra tip

Scoring to the bone lets the spice paste and heat reach the thick middle of the fish, so it cooks evenly.

  • • Pat the fish dry before rubbing it so the skin chars instead of steaming.
  • • A fish basket makes turning a whole fish on charcoal much easier.

Common mistakes

  • • Turning the fish too early, so the skin tears.
  • • Skipping the slashes, so the middle stays raw while the outside burns.

Substitutions

  • • Instead of kingfish: Spanish mackerel, sea bream or kingfish steaks (grill 5 minutes per side)
  • • Instead of cashews: toasted almonds

Serving ideasServe with lemon wedges, sliced onion and a hot tomato sauce on the side.

Frequently Asked Questions

What does mashuai mean?

It comes from shawa, to roast over fire. In coastal Oman a whole kingfish is skewered and turned over embers, then served on lemon rice.

Why are the quantities marked as composed?

Omani sources describe the spices and method but give no amounts, so we set them for a 1.5 kg fish and four people. Adjust the chili and lemon to taste.

How do I stop the fish sticking to the grill?

Heat the rack well, oil it and the fish, and wait until the skin releases on its own before turning.
