5 minutesWash the parsley and mint and dry them completely with paper towels.

Bulgur
20 minutesSqueeze the lemons and dice the tomatoes finely. Mix the bulgur with half of the lemon juice and the juice from the tomatoes and leave for 20 minutes.

Chopping
15 minutesWhile the bulgur soaks, chop the parsley and mint finely with a very sharp knife, cutting once through without crushing the leaves. Finely slice the scallions.

Mixing
3 minutesCombine the herbs, scallions, bulgur and tomatoes. Dress with the olive oil, the rest of the lemon juice and the salt, and serve.
