Before the heat goes on

Measure, cut, and arrange every ingredient in order of use. Read the full method and keep finishing ingredients separate.

  1. 01

    Syrup

    10 minutesMedium heat

Make the syrup: boil the syrup sugar with the water for 8 to 10 minutes, add the lemon juice and leave it to cool completely.

    Success cue

The syrup is slightly thick and clear.

  2. 02

    Ashta

    40 minutesMedium heat

For the ashta, whisk the cornstarch into the cold whole milk in a pot, then add the heavy cream and the sugar. Cook over medium heat, whisking all the time, for 8 to 10 minutes until very thick. Cover the surface with plastic film and let it cool for 30 minutes.

    Success cue

Thick enough to hold a line when you draw a spoon through it.

    Watch out

Whisk without stopping; the milk sticks and scorches fast once it thickens.

  3. 03

    Kataifi

    10 minutes

Heat the oven to 180°C. Pull the shredded kataifi dough apart with your fingers into short strands and rub the melted ghee into it until every strand is coated.

    Success cue

Every strand is shiny with ghee.

  4. 04

    Filling

    10 minutes

Press half of the kataifi firmly into a 30 cm round pan, spread the ashta over it leaving a 1 cm border, and cover with the rest of the kataifi, pressing it down.

    Success cue

The ashta is fully sealed inside.

  5. 05

    Baking

    50 minutesOven heat

Bake on the lowest shelf for 45 to 50 minutes, until the base and edges are deep golden.

    Success cue

Lift an edge: the base is deep golden.

  6. 06

    Syrup

    15 minutes

Pour the cold syrup evenly over the hot konafa as soon as it comes out of the oven, sprinkle it with the pistachios and leave it for 15 minutes before cutting.

    Success cue

The syrup is absorbed and the top still crackles.

Cooking tips

Extra tip

Baking on the lowest shelf browns the base well, so it stays crisp under the syrup.

  • • Pull the kataifi apart well; long clumps bake unevenly.
  • • Cold syrup on hot konafa keeps it crisp.

Common mistakes

  • • Spreading warm ashta, which melts into the dough and makes it soggy.
  • • Pressing too little ghee into the kataifi, so it bakes dry and pale.

Serving ideasServe warm or at room temperature, cut into wedges.
