Salsa
5 minutesFinely dice the tomatoes, onion and jalapeño and mix with the lime juice and a pinch of salt.

Guacamole
3 minutesMash the avocado with a fork, then mix in the finely chopped onion, lime juice and a pinch of salt.
Success cueThe guacamole is chunky, not a smooth puree.

Rice
20 minutesLow heatRinse the rice, cover with 400 ml of water and a pinch of salt and bring to a boil. Cover and cook on low heat for 15 minutes, rest for 5 minutes, then fold in the chopped cilantro and the lime juice.
Success cueThe water is absorbed and the rice is tender.

Beans
5 minutesMedium heatWarm the beans with half of the cumin, a pinch of salt and 3 tablespoons of water over medium heat for 5 minutes, mashing a few of them.
Success cueThe beans are hot and creamy.

Beef
14 minutesHigh heatHeat the oil over medium-high heat and cook the diced onion for 4 minutes. Add the beef and brown it for 6 to 8 minutes, then add the tomato paste, the rest of the cumin and 1 teaspoon of chili powder and cook for 2 minutes.
Success cueNo pink remains in the beef.

Tortillas
2 minutesMedium heatWarm each tortilla in a dry pan for 30 seconds per side until soft and easy to fold.
Success cueThe tortillas fold easily without cracking.

Filling
3 minutesLay rice, beans, beef, cheese, salsa, guacamole and sour cream in a line across the center of each tortilla.
Success cueThe filling sits in a neat line with space at the edges.

Rolling
2 minutesMedium heatFold in the sides, roll tightly and toast seam side down in a skillet over medium heat for 2 minutes.
Success cueThe seam is sealed and golden.
Cooking tips
Griddling the wrapped burrito melts internal cheese into structural glue.
